For the Rice
  • 2 tablespoons Sunflower Oil or any neutral oil
  • 1 cup Basmati Rice or other long-grain rice varieties
  • 4 cloves Garlic chopped
  • 1 teaspoon Red Chilli Flakes optional
For the Flavor
  • 1 tablespoon Lime Zest
  • 1 tablespoon Lime Juice adjust to taste
  • 1 cup Cilantro chopped
  • 2 tablespoons Spring Onions optional, for garnish

Method
 

Cooking Steps
  1. Heat the sunflower oil in a large pan over medium heat and shimmer for about 1 minute.
  2. Add the basmati rice and toast for 2-3 minutes until slightly golden.
  3. Stir in the chopped garlic and red chilli flakes, sautéing for about 1 minute.
  4. Add lime zest, then pour in 2 cups of water and a teaspoon of salt.
  5. Bring to a simmer and cover the pan.
  6. Reduce heat to low and cook undisturbed for 15 minutes.
  7. Let the rice rest, covered, for another 10 minutes.
  8. Fluff the rice with a fork and mix in lime juice and cilantro.
  9. Transfer to a serving dish and garnish with chopped spring onions.
