Cooking Steps
- Heat the sunflower oil in a large pan over medium heat and shimmer for about 1 minute.
- Add the basmati rice and toast for 2-3 minutes until slightly golden.
- Stir in the chopped garlic and red chilli flakes, sautéing for about 1 minute.
- Add lime zest, then pour in 2 cups of water and a teaspoon of salt.
- Bring to a simmer and cover the pan.
- Reduce heat to low and cook undisturbed for 15 minutes.
- Let the rice rest, covered, for another 10 minutes.
- Fluff the rice with a fork and mix in lime juice and cilantro.
- Transfer to a serving dish and garnish with chopped spring onions.
