Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium heat.
  2. Add 1 pound of ground chicken, 1 chopped red bell pepper, 1 diced white onion, and 1 minced jalapeño. Cook for 7-8 minutes, stirring occasionally until the chicken is browned and all vegetables are softened.
  3. Stir in 1 teaspoon of garlic powder, 2 teaspoons of chili powder, 1 teaspoon of kosher salt, and 1 teaspoon of ground cumin.
  4. Add 2 cups of cooked rice, ½ cup of salsa verde, and 2 tablespoons of chipotle sauce to the skillet. Mix everything thoroughly.
  5. Lay an extra-large flour tortilla flat on a clean surface. Spread a layer of shredded cheddar cheese in the center, then add a generous portion of the chicken and rice filling.
  6. Preheat a skillet over medium heat and place the assembled burritos seam-side down. Cook for about 3-4 minutes until the bottom is golden and crispy, then flip and cook the other side for an additional 3-4 minutes.
