Cooking Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering, about 1-2 minutes.
- Add 1 pound of ground chicken to the skillet, breaking it into smaller pieces with a spatula. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Dice 1 yellow onion and mince 2 garlic cloves. Once the chicken is browned, add the onion and garlic to the skillet. Sauté for about 2 minutes or until the onion becomes translucent.
- Incorporate ½ cup of chopped sun-dried tomatoes along with 1 teaspoon of salt, ½ teaspoon of coarsely ground black pepper, 1 teaspoon of sweet paprika, and ½ teaspoon of chili flakes into the skillet.
- Pour in 1 cup of chicken broth, stirring well to combine, then add 1 pound of gnocchi.
- Once boiling, reduce the heat to medium-low and let it simmer for about 3-4 minutes, or until the gnocchi is tender.
- Remove the skillet from heat and add in 1 cup of shredded cheddar cheese. Stir gently until the cheese melts completely.
- Spoon the rich and creamy Cheesy Chicken Gnocchi Skillet into bowls, garnishing it with additional cheese or fresh herbs if desired.

Notes
Monitor the simmer to ensure you don’t overcook the gnocchi; keep cheese timing in mind to prevent breaking the sauce. Use store-bought gnocchi for best results and add veggies for additional nutrition.
