Ingredients

For the Salad
  • 2 medium English Cucumbers Use firm ones for the best crunch.
  • 8 ounces Crab (or imitation crab) Can substitute with shrimp or tofu for a protein alternative.
  • 1 medium Avocado Cube just before serving to prevent browning.
  • 1/2 cup Mayonnaise Adjust the amount to your taste.
  • 4 ounces Cream Cheese Optional for added richness; Greek yogurt works beautifully as a lighter substitute.
  • 2 tablespoons Soy Sauce Consider low-sodium varieties for a healthier touch.
  • 1 tablespoon Sesame Seeds Perfect for garnish and a slight crunch.
Optional Add-Ins
  • 1/2 cup Shredded Carrots Adds a burst of color and sweetness.
  • 2 tablespoons Chives A sprinkle gives a hint of onion flavor without overpowering.
  • 1 teaspoon Sriracha For a spicy kick.

Equipment

  • Sharp Knife
  • mandolin slicer
  • Mixing Bowl

Method

Preparation Steps
  1. Slice Cucumbers: Rinse and dry English cucumbers. Cut into thin, 1/8-inch thick rounds. This should take about 5 minutes. Place in a large mixing bowl.
  2. Prep Other Ingredients: Dice crab (or imitation crab) into bite-sized pieces, cube avocado just before adding, and soften cream cheese at room temperature.
  3. Combine Ingredients: In the bowl with cucumber slices, gently fold in diced crab, avocado, mayonnaise, softened cream cheese, and drizzle of soy sauce. Mix without mashing the avocado.
  4. Mix and Serve: Taste, adjust seasoning if needed, garnish with sesame seeds, and serve immediately.
