- Heat 1 tablespoon of olive oil in a 12-inch broiler-safe skillet over medium heat. Cook potato gnocchi until golden-brown and crispy.
- Melt 2 tablespoons of unsalted butter in the same skillet. Add sliced yellow onions, thyme, kosher salt, and black pepper. Cook for 30 minutes until caramelized.
- Pour in 1/4 cup of dry white wine, scrape the pan, and let it cook down for about 1 minute. Stir in 1 teaspoon of balsamic vinegar.
- Combine crispy gnocchi with caramelized onions and sprinkle 6 ounces of Gruyère cheese on top. Broil for 4–6 minutes until bubbly and golden.
- Sprinkle with remaining fresh thyme and black pepper before serving. Enjoy warm straight from the skillet.
