- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the eggplant into uniform half-inch fries and place in a bowl.
- Toss the eggplant fries with olive oil, salt, and black pepper. Let sit to absorb flavors.
- Prepare the coating by mixing breadcrumbs, Parmesan cheese, oregano, and garlic powder.
- Coat each eggplant fry in the breadcrumb mixture and place on the baking sheet.
- Bake for 20–25 minutes, flipping halfway until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving warm with dips.
