Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplant into uniform half-inch fries and place in a bowl.
  3. Toss the eggplant fries with olive oil, salt, and black pepper. Let sit to absorb flavors.
  4. Prepare the coating by mixing breadcrumbs, Parmesan cheese, oregano, and garlic powder.
  5. Coat each eggplant fry in the breadcrumb mixture and place on the baking sheet.
  6. Bake for 20–25 minutes, flipping halfway until golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes before serving warm with dips.
